We pasteurize the milk before we make it into cheese. This process was first developed in 1864 by Louis Pasteur, and we still use it today to kill any harmful organisms found in milk.
Salt
Non-iodized, semi-coarse salt is added to our Bacon and Horseradish Cheese Curds for a variety of reasons. Salt helps draw out the moisture from the curds, enhances the texture of the cheese, and helps neutralize the acid that’s in the cheese. Most of all, salt enhances the flavor of the cheese and especially brings out the flavors of horseradish and bacon in this cheese curd flavor!
Microbial Rennet
This is a coagulating agent that we use to thicken the milk after it’s pasteurized, causing the curds and whey to start separating.
Cheese Culture
As a lactose fermenting bacteria, cheese culture is added to milk to transform the lactose sugars into lactic acid. This helps the cheese develop its distinct character as it ages.Â
Seasonings
We add horseradish root to give a tangy bite to these cheese curds. We don’t overwhelm the cheese with too much flavor so that the curd itself is the star!Â
