- All of the fat that is naturally found in milk is left in to make our cheese. Rather than remove the fat from the milk, we leave the fat in the milk so you get all the natural health benefits that fresh milk has to offer.Â
- Our milk is pasteurized before being made into cheese to kill any harmful organisms. This process of treating milk with heat was developed by Louis Pasteur in 1864 and has become a standard practice when handling milk.
Salt
- We add non-iodized, semi-coarse salt to our cheese curds. This helps draw out the whey from the curds and enhances the texture of the cheese. Salt works to neutralize the acid found in cheese, as well as acts as a natural preservative. Most importantly, salt enhances the flavor of cheese curds! In this case, salt helps to bring out the flavors of turkey bacon and smoke.Â
Microbial Rennet
- Microbial Rennet is a coagulating agent we use to cause the milk to thicken. This thickening causes a separation of curd and whey.
