- The salt we choose is non-iodized and semi-course. Salt, most importantly, enhances the flavors in the curd. It also helps draw out the whey in the cheese to improve the texture. Another benefit of salt is its natural preserving qualities!Â

- We use this to thicken the milk when we make cheese. Microbial Rennet is a coagulating agent that causes the milk to thicken and the whey to separate from the curd before cutting it.Â
Cheese Culture
- We add Cheese Culture to our cheese curds to digest the sugars found in milk. This transforms the sugars into lactic acid, which creates the curds for us to enjoy!
Seasonings
- Dill weed is added to our classic cheese curd recipe. This adds a delicious herbal flavor that compliments the garlic nicely. Dill weed also adds a pop of color to the curd.
