Cheese curds are bite size pieces of fresh cheddar before aging. They have a squeaky, fresh and salty taste that is an all time favorite snack. Mild in flavor and similar to mozzarella.

Ingredients for Fresh Cheese Curds
Pasteurized Milk
Our fresh cheese curds are made with milk directly from the dairy cows you see grazing around our Honeybrook, PA, location. The milk goes straight from the cows to our cheese-making vat with no in-between.
We leave the fat in our milk when we make cheese. We do this so you get the most health benefits possible from our fresh cheese curds. Whole milk is naturally 97% fat-free!
Louis Pasteur developed the pasteurization process in 1864. Since then, it’s been used to kill harmful organisms found in natural foods, especially raw milk. During pasteurization, milk is treated for a time with heat.
Salt
Non-iodized, semi-coarse salt is what we use to season our fresh cheese curds.
Salt encourages moisture loss by drawing whey out of the cheese curd, which helps the texture of cheese curds.
Salt neutralizes the acidity found in cheese.
Salt enhances the flavor of fresh cheese curds.
Salt acts as a natural preservative!
Microbial Rennet
This coagulating agent is used to thicken milk during the process of making fresh cheese curds. This allows the curds and whey to separate before cutting the curd.
Cheese Culture
Cheese culture can be found in many types and variations. These cultures are called Lactic Bacteria. This lactose fermenting bacteria is added to milk to digest the lactose sugars and produce lactic acid. This transformation creates cheese curds.
